Quick, Easy & Sabrosa Posole

What you need: 

1 onion, chopped
3 cloves garlic, chopped
1 tablespoon oil
salt to taste
2 cans diced tomatoes with green chilies or Retell
2 cans pinto beans, rinsed and drained
1 large can posole (hominy), white or golden
Garnishes:
lots of shredded lettuce (I use Romaine)
chopped avocado
cilantro
tortilla chips, crushed up
sliced radishes

What you do: 

I haven't had "real" posole in over a decade, but this satisfies my cravings for it, and then some. It's a good way to serve a bunch of people relatively cheaply. Enjoy!
Sautee onion and garlic in oil until fragrant. Add salt and sautee a little bit more, then add tomatoes and a few cups of water. Add in beans and posole. Heat through. Season to taste with salt and pepper and chile powder or hot sauce if necessary.
Serve in bowls piled high with lettuce and other garnishes, and eat up.

SO HOW'D IT GO?

I was looking for something quick and easy and this sounded pretty good. I made it exactly as the recipe calls. It was great!!! We had our topping choices of lettuce, avocado, vegan shredded cheese, vegan sour cream, fresh cilantro, fresh salsa, fresh lime wedges, and tortilla chips. It was definitely a hit. I fed my whole family ranging in age from 11 to 39 and none had anything negative to say. Thanks for sharing! Will be making again. :)
