Quick Fix Microwave Walnut Fudge Brownie

What you need: 

1/4 cup flour
1/4 cup sugar
1/4 teaspoon baking POWDER
3 tablespoons cocoa powder
3 tablespoons soy/rice milk
1/4 cup vegan chocolate chips (optional)
1/4 cup walnuts
2 tablespoons pure maple syrup (mandatory)
1 tablespoon melted butter substitute
pinch of salt

What you do: 

In a microwavable bowl combine all dry ingredients (flour,sugar,cocoa, baking powder, salt, walnuts, and choc. chips).
Next add soy/rice milk, melted butter, maple syrup and stir until a consistent fudge like batch appears.
Spread evenly in your bowl and microwave until the full brownie rises including the center then it is done (2 1/2 to 3 minutes).
Enjoy!
*I got the idea to add the maple syrup from a cupcake chocolate frosting in the book VCTOTW, it seems to make this brownie extra fudgy and less cake-like. Fudgy...did I just create a word? hmmmm
*Have some left over vegan icing from cupcakes or choc. gnache to drizzle on top? Takes this brownie to the next level!

SO HOW'D IT GO?

Very chocolaty and yummy. I used vanilla almond milk and added chocolate chips and some chopped belgium baking chocolate. It was a struggle to only eat half of it.

This was super Yummy.  I added ground flax seed and pecans instead of walnuts.  I also used light vanilla soy instead of regular.  I made one bowl with chocolate chunks, and one without.  Both were equally Yummy. This will definitely be a regular recipe in my house, as next week we will no longer have an oven (we live in Okinawa, Japanese don't use them)

Glad you liked it, the choc. chips melting as you nuke it def make it more fudge-like. Also you can try removing it before it rises completely. Thanks for the review... ;)b

this was pretty good.  i made this without the chocolate chips and walnuts because i didn't have any.  i don't think it was sweet enough (also didn't add icing though), and it seemed more like cake than a brownie.  if i were to make it again, i'd add a bit more sugar and maple syrup, and definitely add the chocolate chips.

and as for serving size, this is beyond even 1 indulgent serving, in my opinion.  one bowl made 2 very large servings, if not 3 normal servings.

but overall, this is a great, quick way to get a chocolate fix.
