Quick & Healthy Scrambled Tofu with Dill and Sweet Pepper
1 block of tofu
1 red sweet pepper
a couple handfuls of dill (preferably fresh)
10 cloves garlic (but feel free to use less)
a couple tablespoons soy sauce
2 tablespoons olive oil
Dice the tofu and cut the sweet pepper in little chunks. Add the dill and the (pressed) garlic.
Fry everything in a pan using the olive oil and soy sauce to fry. Let it fry for about 5-10 minutes, stirring occasionally and adding more soy sauce if it sticks to the pan. It should be light brown when done.
Serve with toast and freshly squeezed orange juice for a great breakfast!'
(If you know you're going to be in a Hurry, you can also mix up all the ingredients except the oil and soy sauce the night before.)
