Quick Mex-Style Rice
3 cups cooked basmati rice
1 can Mexican-type chili beans (blended w/juice)
1 cup vegan cheddar cheese
1/2 cup vegan sour cream
1/2 cup diced green onions
1 small can black olives
1 cup favorite salsa
This can be served either hot or cold. If serving hot, preheat oven to 350 degrees F.
Cook rice until done and cool if serving cold.
In blender or food processor, pulse the chili beans until it is paste consistency.
Add beans and rice together and put into baking dish. Sprinkle vegan cheese on top.
If you are serving this hot, bake for 20 minutes and then remove from oven.
Layer remaining ingredients.
