Quick Rice and Veggies

What you need: 

2 cup Minute instant brown rice
1-16 0z. pkg. frozen cauliflower,
1 3/4 cup water
Soy sauce

What you do: 

Put rice, veggies, and water in a large, microwaveable container and cover with vented plastic wrap. Cook in microwave on high for nine minutes. Let stand for five minutes. Fluff with a fork. If desired, stir in chopped scallions and sprinkle with cashews or peanuts. Serve with soy sauce.

SO HOW'D IT GO?

I didn't like that this recipe was so... white. So I decided to use frozen broccoli and cauliflower and add in some black olives I had lying around. The olives really added a good salty flavor.

But I made the mistake of trying to use brown rice. Which was a miserable fail. It took forever to cook and my veggies were drained of color by the end of the process.
