Quickie Curried Kale

What you need: 

1-2 tablespoons water
1/2 onion, chopped
1-2 cloves garlic
1/2 package (6 ounces) vegan bacon, cut into small strips
1 1/2 (15 ounce) cans pinto beans
1-2 tablespoons powdered curry
salt, to taste
6 8 cups kale, chopped

What you do: 

1. Over medium heat, put water in a nonstick pan. Once pan is heated, add onion and garlic, and cook for few minutes (no more than 5 minutes).
2. Add vegan bacon, pinto beans, curry and salt, and cook for 3 minutes.
3. Add kale and possibly a few more tablespoons water if it’s getting dry, and cover with lid. Steam kale for 5 minutes.
This is a quick, low-fat dish, perfect for during the weeks when there’s not much time to cook in the evenings. Double all the ingredients for a family of four.

yummy! this was REALLY GOOD, and a lot better than i expected. the vegan bacon makes it

This was ok. I made my own vegan bacon, and used the rest of some kidney beans that I cooked. I added quite a bit of vegetable broth, and didn't mix the bacon in...just had it on top so it wouldn't get lost in the mix. A healthy meal.
