Quinoa with Garbanzo Beans

What you need: 

1/2 onion, chopped
2-3 garlic cloves, minced
olive oil, as needed
1 cup quinoa
2 cups vegetable broth
1 (15 ounce) can garbanzo beans
1/2 cup spinach, chopped
1 teaspoon basil
1/2 teaspoon cumin
dash soy sauce
dash salt

What you do: 

1. Fry the onion and garlic along with some olive oil in a medium to large saucepan. Rinse the quinoa and add to the pan.
2. Lightly toast it for about 3 minutes. Pour in the broth and bring to a boil. Add the rest of the ingredients.
3. Lower heat and simmer for about 15-20 minutes or until the liquid is gone.

SO HOW'D IT GO?

I loved it, just as it is.  Sometimes we throw in different veggies, and tonight I'm going to throw in some mushrooms.  We make it all the time!

I used joia's cooking directions and used bell peppers instead of onion because we didn't have any.  This was a great recipe! Tasty and healthy ;)b  I added an extra splash of soy sauce to my bowl and my bf added Tabasco to his, but it was pretty near perfect with these additions. Will make again!!

Was good. :)  Theres a lot I would like to add to it. I used more soy sauce, more cumin, and vegan chicken flavored broth instead of veggie. I also didn't have any basil! Looks gorgeous! I wish i took a picture, but we ate it too fast hehe :) next time i am going to play with the flavor a bit!

The flavors of this dish are really good, even though I didn't add basil because I didn't have any.

But, I'd change the cooking process. By adding the quinoa with everything else, it cooks unevenly unless you stir it. In the future, I'll saute the onions and garlic in a saucepan. Add the spinach with a little broth and cook that and then add the garbanzo beans. In a separate pan with a cover, I'd toast the quinoa, add the broth, bring to a boil, then cover it and let it simmer for 15-20 minutes until the broth is absorbed. I would then add the cooked quinoa to the other mixture and cook for a couple minutes to get the flavors to mingle.
