Quinoa Salad

What you need: 

3/4 cup uncooked quinoa
1 1/2 cups water
1 (15 ounce) can black beans, drained
1 carrot, diced
1 celery stalk, diced
6 cherry tomatoes, quartered
1 scallion, chopped
2 cloves garlic, minced
1 small cucumber, sliced
juice from 1/2 lemon
1/4 cup olive oil
1/4 cup apple cider vinegar
dash cayenne pepper
dash cumin
salt and pepper, to taste

What you do: 

1. Boil quinoa in a rice cooker or saucepan with water until all water is absorbed. Set aside to cool.
2. Combine all chopped veggies and drained beans with lemon juice, oil, vinegar and spices.
3. Toss with quinoa, add salt and pepper, to taste and serve. Good with hot sauce!
Source of recipe: I wanted to use up a bunch of ingredients, so I threw this together.

SO HOW'D IT GO?

This was an amazing recipe I made a few adjustments using rice viniger and adding 2 and a half table spoons of soy sauce.

We really enjoyed this... I used red wine vinegar instead of apple cider and no scallions or celery. I also doubled the tomatoes. Very tasty and easy to make, too.

1/4 cup of apple cider vinegar is waaay too much, in my opinion. Unfortunately the vinegar overpowered all the other flavors...if I make this again I'll use less & I'm sure it will be delicious:)

What a great dish for quinoa. It's really become my favorite pseudo-grain (grain...seed...whatever)

I made this yesterday and my boyfriend and I loved it! Our two and a half year old hated it :) I only used one clove of garlic and added extra tomatoes (used roma instead). Thanks for the great recipe!

NoIllusions--> try using grapeseed oil (much more mild flavor) and red-wine vinegar, but not as much as the recipe says...  doesn't need that much liquid anyway.

Did I do something wrong?? The dressing part tasted really bad (sorry). I don't know if the apple cider vinegar overpowered the olive oil or maybe my  olive oil is too strong. I can see maybe trying 1/4 cup of lemon juice and vegetable oil??

So yum and filling! Loved the crunch and the spice. The lemon juice really made it.

i love this salad!!!!! i make it all the time. perfect to whip up a big batch and have for lunch all week. i wouldn't change a thing, though you can definitely sub in different veggies. I like cucumber in mine

I made a few modifications based on what I had in the kitchen, but this combination of quinoa, black beans, lemon juice, cumin, cayenne, olive oil and assorted veggies tasted delicious. Thanks a lot.
