Ranch Dip

What you need: 

1 packet of dry vegan ranch dip mix
16 ounces (more or less) soft silken tofu, well drained
Juice of one small lemon

What you do: 

Basically, throw it all in a food processor and chill for a few hours. The dip mix is vegan, although the Hiden Valley dressing mix isn't, so be careful. This tastes almost exactly like the lacto version, and actually gets better after a few days in the fridge. Play with it, use it as salad dressing (may wanna add some unsweetened soy milk), put it on baked potatoes, pig out on Fritos! Good, good stuff.

SO HOW'D IT GO?

This was wonderful! It was so good, I made the recipe on three separate occasions for this holiday season! Lipton makes a Kosher version of the ranch dip packets (the best part was, it was $.92 for a box of two packets...can't beat that!). I was thinking maybe this would also be good mixed with a little avocado to make it even creamier than it was? I haven't tried that, though, yet...if anyone does, let me know! Great recipe!

I searched on the types of spices used in homemade ranch. I think I will try the recipe and use these spices. I don't know it they are the right amounts for the recipe above. I can't wait to try it!

clove garlic, peeled
2 to 3 pinches of kosher salt 
1 tablespoon minced fresh cilantro or parsley
1 tablespoon snipped fresh chives
kosher salt to taste
black pepper to taste
