Raspberry Tofu Pudding

What you need: 

12 ounces soft tofu
1/4 cup raspberry jam
1 teaspoon vanilla
2 teaspoons brown sugar or agave nectar

What you do: 

1. Throw all your ingredients in the food processor (you might want to break up the tofu a bit) and blend until smooth.
2. Scrape down sides.
3. When finished, taste and add a bit of extra brown sugar or agave nectar if needed.
Source of recipe: I found a very similar recipe online that was not vegan, and made one modification to make it vegan.
