Raw Chocolate Fruit Balls

What you need:

1/2 teaspoon cinnamon
1/4 cup desiccated coconut
1 cup nuts (raw almonds, cashews, macadamias)
1/2 cup pitted chopped dates (I use organic)
1/2 cup dried apricots, chopped
1/2 cup raisins
2 tablespoons unsweetened cocoa powder
1/8 teaspoon natural almond essence
1 tablespoon fresh orange juice

What you do:

1. Mix the coconut and cinnamon in a small bowl and set aside for rolling.
2. Put all other ingredients except orange juice in a food processor, and slowly add in the orange juice if it doesn’t bind together completely.
3. Roll into small balls and coat with the coconut mixture.
4. Store in a sealed glass container in the fridge.

SO HOW'D IT GO?

I'm not usually a recipie follower but these were sooooooooo good, I wouldn't change a thing.

They taste even better than ones a local vegan sweet shop makes! Yum!

^^Baha!! Survivalisnotanoptio, based on your giggle-inducing comment coupled with the yummy pic, I decided to make these tonight. They're pretty yummy. I used almonds and added the coconut and (less) cinnamon right to the mix as well as some raw oats for fun. I added less than a tablespoon of raw peanut butter to help hold it all together. In the end, I rolled them in cinnamon and cocoa power and have tossed them in the fridge to get them to firm up just a bit for a long day at Ikea tomorrow.

Word to the wise: if you decide to make these with almonds at 2am in your converted-house basement apartment, DO chop the nuts BEFORE throwing in the food processor, as they WILL wake sleeping neighbours...
