Raw CranApple Relish

What you need: 

12 ounces fresh cranberries
2 medium apples, cut into 8 pieces each
1/2 cup natural sugar

What you do: 

1. Rinse the cranberries and remove any stems, shriveled cranberries, or debris. Put the cranberries into the food processor and pulse to chop coarsely.
2. Pour into a bowl and process the the apples until the chunks are a similar size. Put the apples into the bowl, add the sugar to taste, and mix.
3. Refrigerate the relish for a day or two to allow the flavors to develop.

SO HOW'D IT GO?

I looked at this recipe and thought " too plain and too much sugar"  I added a large shredded carrot, a cup of coarsely chopped walnuts, 3/4 cup unsweetened shredded coconut and 1/2 cup +/- honey.  Outstanding!!!

This will be our first vegan thanksgiving.  I know there will be carnivores eating turkey at dinner but I'll grin and bear it.
