Raw "Halva"

What you need:

2 cups raw tahini (if you can't find it, make your own by food processing raw sesame seeds)
3/4 cup raisins
1 tablespoon ground flax seeds (optional)
date paste or raw agave nectar (optional; Madhava's Raw Organic Agave is raw)
raw nut pieces (optional)
raw cocoa powder (optional)

What you do:

1. If using date paste:
10 dates water, to cover dates small pinch raw, unrefined sea salt (optional)
Soak dates in water for 15 minutes. Place the dates in a food processor and blend until smooth. Use soaking water as needed for consistency.
2. Place the tahini, raisins, and ground flax into the food processor and pulse a few times before running on med high for a couple of minutes until the raisins are mostly chopped up (you may find that you prefer them chopped less or more, the more blended they are, the sweeter the halva will be). Taste - if it's not sweet enough for you, add date paste or raw agave nectar. (Not all "raw" agave nectar is raw. On the packaging or website of truly raw agave nectar, it will state the drying temperature. If it doesn't state it in either place, it likely isn't raw.)
3. Roll into balls and press the raw nut pieces on.
4. Refrigerate or freeze. Or, spread into a lined pan and refrigerate, for a more traditional slicing halva. You could also add cocoa and additional date paste or raw agave nectar if you want chocolate halva.
