Raw Kale Salad

What you need: 

1/2 bunch kale, chopped
2 tablespoons dried cranberries, divided
2 tablespoons pine nuts, divided
1/2 medium tomato, diced, optional
1 tablespoon olive oil
2 tablespoons lemon juice
salt and pepper, to taste

What you do: 

1. Divide the kale into two salad bowls. Top each bowl with 1 tablespoon cranberries and 1 tablespoon pine nuts.
2. Add 1/2 the tomatoes to each bowl, if using. In a small bowl, whisk the olive oil, lemon juice, salt, and pepper.
3. Add more olive oil or lemon juice to taste, if desired.
4. Top the salad with the dressing.

SO HOW'D IT GO?

I love this salad because kale contain fiber, the vitamins A, C, K and folate, and the minerals iron and calcium. In addition, these leafy greens are rich in chlorophyll, which helps to prevent cancer by blocking the metabolism of carcinogens, which are cancer causing chemicals. Raw foods are used for cancer prevention.

2nd time i've made tyhis now.
I used dried cherries this time and sunflowers..  i love pine nuts though
