Raw Lower-fat Hummus

What you need: 

1/2 cup sesame seeds
1 large or 2-3 small zucchini, chopped 2-3"
2-3 garlic cloves
1 lemon or lime, juiced
1/4 cup water, plus extra
salt and pepper, to taste

What you do: 

1. Blend sesame seeds on high until ground (I use a Vitamix but you could do this step in a coffee/spice grinder).
2. Place all ingredients in blender or processor and blend until smooth, adding more water as needed to desired consistency.
This will come out a light green color which was fine with me, but if you'd rather have a more hummus-y appearance, peel the zucchini first. Variation: Soak 6 sundried tomatoes for 20-30 minutes and add along with soaking water to your hummus, Yum!
Source of recipe: I got this recipe from a potluck and adjusted the ingredients to be lower fat.
