Raw Tacos

What you need: 

1/2 avocado
3 slices green pepper
1 slice onion
Lemon juice
Garlic powder
Salt
3 pieces romaine, green leaf, or red leaf lettuce
Pico de gallo salsa, as desired
2 slices each red and yellow pepper
1/2 cup broccoli and cauliflower florets

What you do: 

1) Mash the avocado in a bowl. Chop 1 slice of green pepper and half the onion slice and add to the avocado. Season to taste with lemon juice, garlic powder, and salt, thus making raw guacamole.
2) To assemble, lay down a leaf of lettuce and spread with a layer of guacamole. Top with pico, peppers, onion, broccoli, and cauliflower. Top with salsa and fold in the back and roll up sides.

Raw tacos are delicious and messy. I used asparagus instead of broccoli. Fantastic. Thanks

This was a good idea. I had to tweak it to use what I had in my kitchen. I used a whole avocado, lime juice, a garlic clove, and cilantro leaves to make the guacamole, and topped with one chopped roma tomato and half a red bell pepper. It fit all on about 5 romaine leaves. Very tasty and filling!

:) YUMMO!  Soo good for you!  I wasn't really full after the 3 leaves so I would maybe mash up a whole avocado and make more next time!  Awesome recipe - thanks a bunch!!
