Rawzange Lasange!

What you need: 

1/2 cup sundried tomatoes soaked
1/4 cup chopped red pepper
pinch tyhme
pinch salt
handful spinach leaves or 1 zucchini sliced lengthwise (mandoline)
1 cup squash (processed, I used spaghetti, but acorn or the like will work) or shredded carrots
1/2 cup cashew cheeze (recipe in cheeze section) with nutritonal yeast and pinch oregano/basil
kalamata olives (optional)
1 tablespoon oilve oil for red sauce

What you do: 

Take soaked sun dried tomatoes, red pepper, spices, salt and olive oil. Process until smooth. This is your red sauce.
Layer the spinach (or zucchini) on the bottom of a pan or your plate.
Then add dollops of the cheese (don't try to spread, it will squish together as you eat and layer).
Then squash or whatever you chose.
Layer with more spinach.
I do three or four layers, but you can do more. This is a smaller serving recipe, so double it for four people.
After you layer like you like, ending with spinach leaves, pour on sauce and sprinkle on olives! Enjoy!!
