Red Curry Cauliflower Mushroom Stew

What you need: 

2 leeks, sliced
1 cauliflower head, cut up
3 carrots, sliced
1 1/2 cups button mushrooms
1 teaspoon red curry paste
1/2 cup soy cream
1 teaspoon dragon
1 cup passata (tomato puree)
1 tablespoon soy sauce
1/2 cup roasted sunflower seeds

What you do: 

1) Saute the leeks in a big pot for a few minutes. Add the carrots.
2) Stir in the red curry paste together with a little bit of water. Add all your other vegetables. Saute this for a few minutes more. And stir in passata. After 10 min. your vegetables should be soft.
3) Now you can add all the other ingredients, except the sunflower seeds. Heat through and serve with some basmati rice topped with the sunflower seeds.

SO HOW'D IT GO?

I'm barely reviewing this recipe, as I modified it to the brink of recognition.  But I get what's supposed to be going on here, and I dig it.

green curry paste + 1/4 C srirachas
3/4 C lite coconut milk
1/4 C tomato paste + 3/4 C water

Thought it needed salt... added 1/4 tsp seasoning salt
Thought it needed more curry... added 1/2 tsp curry powder

This is a nice change up to my standard dinner fare.  Will make it again!  Possibly will follow the recipe, pantry stockage allowing.  ;^)

1 teaspoon dragon?  I'm going to be a smart-ass and say that not only are dragons extinct if they ever existed but they would be an animal product and therefore not vegetarian!

OOPS!  I forgot to translate a dutch word.  It's tarragon (and in dutch we say dragon).  Thank you for noticing.
