Refreshing Quinoa Salad with Avocado and Cilantro

What you need: 

1 cup quinoa (I like to use red quinoa to color things up!)
1/4 cup fresh cilantro, chopped
1/2-3/4 cups black beans
2 large cloves garlic, minced
1 tomato, diced
1 avocado, diced
1 lime, juiced
salt, to taste

What you do: 

1. Cook quinoa according to package directions, and allow to cool to room temperature.
2. Add all remaining ingredients and combine thoroughly. Season, to taste.
3. Chill, if desired. I personally think this dish tastes better after it has been refrigerated for a while.
It can be really garlicy, since the garlic is raw. You can use less if you don't like raw garlic. Enjoy!
Source of recipe: A friend of mine made me a dish similar to this, but I added my own little twists. It is great to bring to BBQs, or to bring on a picnic!
