Rhubarb Porridge

What you need: 

1 cup stone ground porridge oats (any oats would work, but Scottish are just the best)
1 cup soy/rice/almond milk
1 cup water
2 large stalks rhubarb, chopped
1/2 cooking apple, chopped
6 strawberries (optional, but they add beautiful color)
3/4 cup sugar (or more to taste)
juice of 1/2 lemon
pinch of salt
mixed seeds (optional)

What you do: 

In a small saucepan, combine rhubarb, apple, strawberries, vegan sugar and lemon juice and bring to a boil. Simmer for 5 minutes.
While simmering, boil up the oats with the water and milk and salt. Once the oats take on a porridge consistency (about 5-10 minutes), stir in the fruity mixture, scatter some mixed seeds on top, and enjoy.
You could also serve the oats with the fruit mixture swirled on top and topped with mixed seeds.

SO HOW'D IT GO?

I make this all the time and it is delicious!  I like to sprinkle pecans on top.  Also, you could try sweeting with stevia instead of using all that sugar...a much healthier way to start the day.

It probably didn't need that much, but I've never cooked with rhubarb...so I didn't really know (we didn't use all that rhubarb for two bowls of oatmeal though!) I use Florida crystals; I've never used stevia. I'll see if it's in our bulk dept. ?

This is my new favorite oatmeal! I never knew I loved rhubarb. This time I just used up all of our rhubarb (like 8 stalks), added juice from 1 orange, 1/2 cup sugar, and some water, and boiled it for a few minutes. I made our regular oatmeal, and topped it with the rhubarb and some pecans.

Yum! I used 2 cups rolled organic oats and 2 cups soy milk (my regular oatmeal). For the fruit, I used 2 rhubarbs, a whole pink lady apple, 1/2 cup sugar, and the juice from1 orange instead of lemon juice. I really liked this.  ;)b
