Rice pudding

What you need:

3/4 cup rice
1 1/2 cups water
2 cups nondairy milk (I use vanilla almond milk)
1/3 cup sugar
dash salt
1/2 teaspoon allspice
1 teaspoon vanilla

What you do:

1. Combine rice and water together in a large pot and bring to a boil. Once the rice is boiled, set to low and let simmer with a lid on until all the water is soaked up by the rice, 15-20 minutes.
2. Add milk, sugar, salt, vanilla and allspice to the rice. Stir and set stovetop to medium low. Stir occasionally, and cook for 10-20 minutes, until the consistency is thicker.
Serve warm right from the pot. Raisins and other add ins like nuts would also be good in this recipe; I just didn't have any at the time. If you chose to add such things, just mix them in with the milk, sugar, vanilla, and salt.

ohh by the way, if u have left overs,  keep cold in the fridge. Then whenever you so happen to want a quick breakfast or desert, add a sliced banana to the cold rice pudding and microwave for about a minute and then pour some more almond milk on top. Its really good, the banana really complements the dish. You could also just add the banana with the milk, sugar etc when your making the rice pudding.
