Roasted Sweet Potato and Vegetable Combo

What you need: 

2 medium-sized sweet potatoes, cubed
1/2 cup yellow onion, chopped
4 large mushrooms, halved and sliced
1/2 cup red bell pepper, chopped
1 garlic clove, minced
olive oil, to lightly coat

What you do: 

1. Preheat oven to 375 degrees F. Combine vegetables in an oven-safe dish and lightly coat vegetables with olive oil.
2. Roast for about 30 minutes or until sweet potatoes are tender, stirring periodically.

SO HOW'D IT GO?

I made this with sweet potato, onion, mushrooms, red pepper, garlic, cinnamon, cayenne pepper, black pepper, and vegetable oil. It was delicious and smelled wonderful in my kitchen as well. I will definitely be making this again in the future! Thanks for the recipe! :)

I am making this now with sweet potato, onion, garlic, agave, cinnamon, cardamom, salt&pepper, and cayenne. It almost smells like thanksgiving in here :). I wish I would have been able to make it with fresh sage, but I believe this will taste wonderful as is. Thanks for the idea :D

I was just looking at this...and I don't know why olive oil is in this when it's heated to 375 F oven. Olive oil should not be used for high heat cooking, it can only withstand heats less than 280 F, if I'm recalling correctly.

I guess I would use vegetable oil or roast with a little water, and then when ready to serve drizzle olive oil over it. Extra Virgin Olive Oil has many health benefits, so I definitely recommend consuming it, just remember to not expose it to high heat! Enjoy.

Oh, and this is a pretty versatile dish: try Italian herbs and roast with tomatoes for an Italian flare, or use curry powder and cinnamon for Indian style, or serve with black beans and mix in spices for a Mexican fiesta! Simple and nutritious.
