Roasted Veggie Salsa

What you need: 

5 medium size tomatoes
1/2 cup green pepper
1/2 red pepper
green onions or yellow; as much as you want
3 teaspoons fresh cilantro
2 teaspoons fresh basil
1 teaspoon lemon juice
pinch salt & pepper
1-2 teaspoons hot pepper
olive oil
also add chopped artichokes if desired!

What you do: 

Line a baking dish with foil. Wash & cut tomatoes in half. Coat bottom of pan with olive oil. Cut peppers & onions. Add to dish, add seasonings on top with a drizzle of olive oil. Bake for 30-35 minutes at 350 Fahrenheit or until brown; for extra browness put in broiler for 3 min. When done, add ingredients to food processor. Add to tacos, enchildas, eat with chips, whatever you feel like.

SO HOW'D IT GO?

I made Roasted Veggie Salsa to T! I followed all instructions perfectly & it came out pretty good. My only critique is that it initally has a slightly sweet taste. Maybe I should have added more garlic!  ;)b
