Russian Barley Soup

What you need:

1 cup of barley
4 medium size potatoes (red work best)
3 small or 2 medium size sour! pickles
1 cup of tomato puree
1 half of med. sized yellow onion
1 med. sized bell pepper (in this soup I prefer green)
garlic to taste
olive oil (enough to saute onions and peppers)
Bragg's to taste
other seasonings to taste/I used Mrs. Dash , a bit of yellow curry powder, dry Italian seasoning.

What you do:

My mom's recipe.
Bring full pot of water to a boiling state. Add Bragg's, cut up garlic , other seasonings and tomato puree. This is your broth.
Add barley to the broth and cook until almost done.
While barley is cooking cut up onions and peppers, grate pickles and peel and cut up potatoes (bite size chunks). Note that you will have to add water to your broth, because it will evaporate while barley is cooking (it takes a while for it to cook). Just adjust the taste of broth by adding more seasonings.
When barley is almost done, add potatoes.
Put some olive oil into a separate pan and heat it up, once hot put in onions, peppers and then a little later (after you start smelling the peppers) grated pickles. Saute for about 15-20 min and then add to a the pot with barley and potatoes. Cook until potatoes are done maybe a little longer. The barley should be done by then.
The soup should be slightly sour to taste. I know it is very weird, but really tasty soup. It is great during cold season; like Russian winter.
