Rustic Penne Pasta
16 ounce box penne pasta
1/4 cup olive oil
1 large onion, chopped roughly
1 (10-ounce) bag of white mushrooms, chopped roughly
1 (25-ounce) jar of tomato pasta sauce
1. Cook pasta (in a large enough pan to fit ENTIRE contents of box) according to directions on box.
2. Heat up oil in a very large sauce pan over medium-high. Saute onions until soft and clear. Throw in mushrooms, stir to cook evenly and coat with oil. Once mushrooms appear nice and uniform, reduce heat to very low and add pasta sauce.
3. Once pasta is cooked, drain and pour into sauce pan to toss with the tomato sauce. Once penne pasta is thoroughly mixed, pour into a serving dish.
4. Eat and enjoy!
Source of recipe: I came up with this recipe as a quick and easy alternative to hot dogs at my parents' massive midst of June party. It is pretty carbohydrate-dense, so make sure to eat a handful of nuts or so to stabilize your blood sugar!
