Sals Unfried Potatoes
1 medium onion, coarsely chopped
1 cup veggie broth
10 new red potatoes, sliced 1/4" thick
2-3 sundried tomatoes, diced
fresh ground black pepper, to taste
1/3 cup mushrooms, sliced
1. Put veggie broth and onion into a frying pan and bring to a boil.
2. Toss in potatoes and sundried tomatoes. Add pepper, to taste. Toss in mushrooms.
3. Simmer until all the broth has been mostly absorbed by the potatoes.
Really yummy and simple. My husband went nuts over them. (He doesn't usually try my stuff these days.)'
