Salsa

What you need: 

4 - 5 large tomatoes
1 bunch green onions
1 - 1 1/2 bunches of cilantro
4 - 5 serrano peppers
1 - 2 large cloves of garlic
3 - 4 lemons or limes (about 3/4 cup of juice)
salt to taste

What you do: 

Chop all the ingredients and place in a bowl. Sprinkle salt over ingredients and toss. Serve with tortilla chips (also great over rice and beans with vegan sour cream)
Adjust ingredients to taste. If you want it spicier, add more serranos, etc. If you hand chop all your ingredients, make sure to finely chop the peppers or you guests may get a spicy surprise.
This is a great recipe because its extremely simple and easy to adjust for larger or smaller groups. I don't really ever measure the items, its all by taste. Make sure all the vegetables are fresh, no canned tomatoes (It just won't taste right) If you can't find serrano peppers you can substitute fresh jalapeno peppers. The recipe can be also be chopped in a blender if you don't want to chop all the vegetables by hand.
