Samoan Banana Porridge
12 very ripe bananas
1 quart water
1/2 package tapioca
1 cup coconut milk
1/2 cup sugar
Peel bananas and place in large pot with water. Bring to boil and simmer slowly for 15 minutes.
Mash bananas in pot and then add tapioca and simmer 10 additional minutes.
Stir in sugar and coconut milk.
Remove from heat and serve.
Serve hot or cold and add granola if desired for more texture.
