Samosa (raw vegan)

What you need: 

1 head cauliflower, chopped
1 yam, chopped
1 zucchini, chopped
1/4 cup walnuts
1/4 cup raisins
2 dates
2 cloves garlic, pressed
1 cup green peas
juice of 1 lemon
4 tablespoons olive oil
1 tablespoon curry powder
1 teaspoon cumin
1 teaspoon red pepper flakes
1 teaspoon salt
1 medium onion, finely minced
2 jalapeno, finely minced Mango sauce:
1 mango, peeled and chopped
3 tablespoons agave
1/2 cup water

What you do: 

1. In a food processor with an "S" blade, process the cauliflower, yam, zucchini, walnuts, raisins, dates, and garlic until pureed. This is a lot and I processed this in a few batches. Mix together with the rest of the samosa ingredients.
2. Form into cone shapes or triangular patties and dehydrate for several hours, until the outside is a bit crispy but the inside is still soft.
3. To make the mango sauce, simply puree mango with the agave and water until smooth. Serve the samosas with a generous dollop of mango sauce.
4 servings ~ $2.05 per serving This recipe has a few more ingredients that I usually use, but it's still quite easy to put together. It's also not going to taste exactly like a real fried samosa, but it's still spicy and yummy.

These were awesome. I made two substitutions: I used carrot instead of sweet potato, and avocado instead of oil. I ate the whole batch in a day. I made a second batch two days later. Thanks so much for the recipe! I can definitely see making these weekly.

PS  - I also had to use frozen peas, and they were just fine.

Wow I'm from India and I didn't even know raw samosas existed?!! 

I always buy pre-made vegetarian samosas from Little India for my family to have  I can never eat those cause they're not vegan, so I can't wait to try making these ones for myself :)

What a powerful taste!  LOVE these!  Freakishly good, Ridiculously inexpensive, and absolutely packed with nutrient dense good stuff!

DH took one bite and wasn't sure.  I think the intense flavors really shocked him as they don't look like they should have such a large presence.  After the second bite he was in love and wondering when I'd make them again.

Mine weren't even close to pretty - there's not much space between trays in my dehydrator, so mine were flatter, and darker, and frankly looked like little poo's.  It made no difference at all as they as ridiculously yummy! 

This was an easy prep, too.  Just toss it all in the food processor.  The entire batch fit in mine (12 cup capacity).  This made enough for 2 meals for DH and I (and he had seconds both times!).  Neither of us are mango fans, and preferred it without the sauce.  I may try another fruit next time, just to pretty them up a bit.  We had a big green salad and 8 or so of these Samosas, and a dish of honeydew melon; the melon went with so well that I may try that for a sauce.

I may make another batch today just so that I have some to put in my lunches for work.  they are very portable little nuggets of yumminess.

These sound delicious, but I am unsure how to dehydrate them. Can you please explain.
