Santa Fe Avocado Salad
salad greens (whatever you prefer)
1/2 an avocado coarsely chopped
1/2 tomato coarsely chopped
handful black beans (leftover)
handful of corn (I microwave frozen corn)
1 green onion chopped
salsa (whatever you like)
corn tortilla chips (I use baked)
Put the chips down on a plate and pile on ingredients in order, then use salsa as the dressing.
I normally use the chips to spoon up the salad.
If you prefer dry (not soggy) chips, don't put them on the bottom.
This is pretty adjustable, let me know what you added or took out.
