Sautéed Okra and Mixed Vegetables

What you need: 

1 onion, chopped small
3 cloves fresh garlic, minced
2 tablespoons olive oil
2 carrots
2 tablespoons soy sauce,
2 or 3 portabella mushrooms
2 cups fresh greens (spinach or kale work well)
2 cups fresh okra, chopped

What you do: 

1. Begin by stir-frying the onions and garlic in a large pan on medium heat with olive oil. Stir frequently so they do not stick to the pan.

2. Chop up all the carrots into thin disks. As the onions begin to wilt and change color, add the carrots to the pan, and stir in about half the soy sauce.

3. Chop the mushrooms into small cubes and set aside. Chop up all the greens roughly and set aside.

4. Add more soy sauce along with the chopped okra, and stir everything to combine. Wait just until the okra begins to soften and add the mushrooms and greens. Reduce heat. Continue to stir slowly, adding additional water and adjusting seasonings as desired. When the vegetables are done to your liking, serve. Enjoy!
