Scrambled Tofu

What you need: 

1/2 block firm tofu (I prefer fine herb, but whatever you like will do)
1/4 cup broccoli florets
2 green onions, chopped
1/4 cup green pepper
1/3 cup salsa, or more to taste
salt & pepper to taste

What you do: 

Heat a small amount of oil on a medium frying pan, and crumble tofu into pan. After about 5 minutes, add vegetables (you can add other vegetables too, of course, this is a great way to get rid of anything waiting to go bad in your fridge). I usually wait about another 5 minutes, and then add the salsa, stir, and remove it from the heat (I like the veggies still crunchy, so leave it a little longer if you prefer them soft). I don't really like eating breakfast, but this stuff is awesome.

SO HOW'D IT GO?

I was looking for something quick and easy to use up some tofu in my pantry, and this was soo good.  I didn't have any broccoli (I will definitely try that next time though!), and I didn't have green pepper either, so I used some fresh spinach and wilted it.  The salsa adds a little something that makes the tofu not bland at all.  I loved this! :)
