Scrambled Tofu

What you need: 

1 cup chopped onion
2 tablespoons chopped jalapenoes or Thai peppers (or as prefered)
1/2 cup chopped tomatoes
1/4 cup chopped cilantro
1 teaspoon cumin Seeds
1/2 teaspoon turmeric powder
1 package, refigerated soft tofu
2 tablespoons oil
salt to taste

What you do: 

This recipe is a substitute for scrambled eggs. Its the Indian way of cooking scrambled eggs.
Heat the oil in a non stick skillet. Add the cumin seeds and the turmeric powder. Then add the onions and saute then till they are transluscent. Add the tomatoes, tofu, jalapenoes and scramble the tofu with a spoon. Cook for a couple of minutes,add salt to taste, and serve hot garnishe'd with cilantro.
