Seitan Curry Salad

What you need: 

4 stalks celery
1/2 Vidalia onion
1/2 cup cashews
1 pound cubed seitan
1/4 cup vegan mayonnaise
Curry powder, to taste
Black pepper, to taste

What you do: 

1) Chop the celery, onion and cashews and put in bowl. Set aside.

2) Cook the seitan on medium low heat for a few minutes until warm. Remove from plan and chop into small pieces.

3) Add to bowl with celery, onion, and cashews. Add vegan mayonnaise, curry powder to taste, and pepper to taste. Stir to combine. Chill before serving.
