Seitan Menudo

What you need: 

3 pounds hominy
3 pounds seitan chunks
3/4 cup oregano
2 tablespoon red chili powder
3 teaspoon cumin
1 teaspoon monosodium glutamate
2 tablespoon salt
1 head garlic
1 bunch cilantro
1 large onion
1 pot water
6 tablespoons canola oil

What you do: 

Inspired by the Mexican dish menudo made with tripe and such. All measurements are approximate and wrong; adjust to amounts you deem reasonable, except for oregano and garlic. Menudo loves lots of oregano and garlic. This is the best stew there is.
Heat oil in pot. Dice onions, cut cilantro, add to pot and saute. Crush garlic, and add to pot along with rest of ingredients. Simmer for an hour and a half.

SO HOW'D IT GO?

my hubby is mexispanishican, and grew up on this stuff. he said its the cure for hangovers. i will ask him if the MSG in necessary but i swear his gramma never used it, i'm sure she used really salty chicken stock, and this recipe seems to have quite a bit of salt in it already....so yeah, i bet no msg is a-ok! ;)b

Can I leave the MSG out of this? It's not good for me, gives me headaches.
