Seitan Noodle Soup

What you need: 

32 oz. no-chicken broth (or vegetable broth)
half of an 8 oz. package of traditional seitan, chopped into small pieces
1-2 carrots, chopped into small pieces
about a quarter size around of spaghetti, broken into 4 pieces and cooked

What you do: 

This recipe is perfect for those that truly believe chicken noodle soup heals when sick. It is a great replacement.
It is best to cook the noodles while chopping the seitan and carrot. When there are a few minutes left, pour the broth into a large soup pot and heat to medium. When the broth heats up, the noodles should be done. Drain noodles and place in broth. Add the seitan and carrot and simmer for 10-15 min. Serve with crackers and orange juice. Enjoy!
