1 28oz can tomato puree
4 - 6 med. baking potatoes
approx 12oz peas (frozen works best)
1 8oz pkg. seitan (Teryaki style)
This was my moms recipe that I veganized. I don't have true measurements to give you because in my family, we always do things by eye & taste, so everything here is an approximation:
Put 1 28oz can of tomato puree into a large pot.Add approx 12oz frozen peas.Set the pot on a low flame.Peel the potatoes, cutting each into about 8 med size pieces. Then add them to the pot, setting it to a medium flame.Add 1 8oz pkg of seitan.Peel and chop the carrots, and add them to the pot.Stir occasionally for approx 15 minutes.Add some salt to taste if you wish.
Let simmer, stirring occasionally until potatoes and carrots are cooked (yes, pluck one outn taste it), usually about 15 minutes after you put the potatoes in.
