Sell-Out Seitan

What you need:

1 cup (240 ml) vital wheat gluten
1.25 oz (35g) package seasoning mix of your choice*
1/2 cup (120 ml) barbeque sauce
1/4 (60 ml) cup water

What you do:

*I've used taco, chili & sloppy joe seasonings. Package weight varies slightly between brand and variety.
Heat oven to 350 F.
In a medium bowl, combine vital wheat gluten and package of seasoning mix (about 1/4 cup). In a measuring cup, combine barbeque sauce and water. Pour the liquid mixture into the dry mixture and stir/knead until it forms a ball. Spread seitan in a lightly oiled 8"x8" or smaller pan (you could also use a loaf pan) and bake for 25 minutes.
Once cool, transfer to a cutting board and cut seitan into strips.
Source of recipe: I wanted to make Susan V's BBQ Ribz at http://blog.fatfreevegan.com/2007/05/barbecued-seitan-ribz.html but didn't have the ingredients, so I made these with what I had on hand and liked the result.

SO HOW'D IT GO?

This sounds easy and good. I have made Susan V"s BBQ Ribz which were very good and this seams a little easier. I like the idea of using the different seasoning packets.
Also I like what another said about the frozen vegetables.

Excellent for a busy vegan husband. Added half a can of mashed up black beans for a protein mix. Wifey says it looked like a chocolate chip brownie dessert. Used Mexican seasoning mix. Thanks.

I made a discovery about this today:  you can mix in ingredients that would normally clump the vital wheat gluten as long as the ingredient is frozen.

I made this today by dumping out the last of my vital wheat gluten (unmeasured, but quite a bit) and adding a packet of taco seasoning, a packet of onion seasoning, powdered broth, and *frozen* veggies - which mixed easily with the dry ingredients.  Then I added water just until the mixture held together and baked it in a loaf pan at 350 F for 45 minutes.  I let it cool on a wire rack, cut it into bread slices, and toasted a couple of slices in a toaster oven.

You can add anything that's frozen.  I usually cook extra lentils and freeze the leftovers.  The next time, I'm going to mix in both frozen veggies and legumes.

This was so easy, and turned out wonderful! ;)b After I cut them into strips I put them in a saucepan and covered them with BBQ sauce, and let them simmer for about 5 minutes. I will make these again.  :)>>>
