Semi Raw-Men Noodle Soup

What you need: 

1 vegetable bouillon cube
1 1/2 cups water
1 zucchini
nama shoyu, to taste
1-2 tablespoons nutritional yeast

What you do: 

1. In a large microwaveable bowl, place the water and bouillon. Heat on high for 2 minutes, and stir with a whisk until the cube is dissolved.
2. Let sit while you spiralize the zucchini into very fine "noodles". Add the noodles to the broth.
3. Add a sprinkling of nama shoyu and nutritional yeast. Stir and enjoy!
This is so simple and delicious; a great quick lunch any day of the week. Pair with a hearty salad and you should be very satisfied! It's also very cheap!
