Sensational Ginger Salsa

What you need: 

1 yellow pepper, roasted and diced
3 large tomatoes, diced
1/2 red onion, diced
3 garlic cloves, diced
3 jalapenos, diced
1/2 bunch cilantro, finely chopped
2 tablespoons ginger, finely diced
1/2 cup rice vinegar
juice of 2 limes
salt, to taste
pepper, to taste

What you do: 

This is the easiest and most tasty snack in the UNIVERSE!!!! The key to this is to take your time. DO NOT use canned items. Only use the freshest items you can find.
1. Roast the peppers. Here is the easiest way I have found to do this. a. Pre-heat oven to broil (both settings). Cut one large sweet bell pepper (any color but green) in half and remove seeds and insides. b. Place skin side up in any pan with sides (I will explain). c. Broil peppers until a lot of the skin turns black and starts to peel. d. Take out pan and cover, with peppers still inside pan. Let peppers cool, covered. The steam will make it much easier to remove the skins. e. Remove skins and dice the peppers.
2. In a large mixing bowl combine all ingredients. Place in a covered container and let sit in fridge for a couple hours. This will let the flavors marry. IT'S THAT EASY.
3. Variations: a. If you like a wet salsa, add more vinegar. This recipe is more of a pico type. b. I like my salsa pretty hot. If you like milder salsa then just don't use as much hot pepper. c. The rice vinegar is used just to add to the eastern flair. It is perfectly ok, and good, to use white wine vinegar as well as not using ginger.
The key is to make it your own. Play with it!
