Sesame Chili Tofu and Vegetable Stir Fry

What you need:

Package of firm tofu
1 tbs Sesame oil
1 tbs low sodium soy sauce
dash of rice vinegar
Grated fresh ginger
2 cloves of garlic, minced
Package of frozen stir fry vegetables
Can of sliced water chestnuts
2 tbs stir fry sauce
1 tbs chili oil
Sprinkle of cumin
Sprinkle of sage
Sprinkle of cayenne pepper
Sprinkle of garlic salt
Sprinkle of onion powder
Brown rice

What you do:

Mix sesame oil, soy sauce, 1 clove of garlic, and ginger in a bowl. Slice drained tofu into cubes. Place in the bowl and mix. Cover in a flat dish and let marinate in the fridge for 30 min- 1 hour.

Preheat oven to 400 degrees. Place tofu on a baking sheet in the oven for 30 minutes. Flip and bake for another 20 minutes.

Sautee 1 clove of garlic in olive oil over medium heat. Add vegetables and spices, cook. Add chili oil and stir fry sauce at the end. Mix in baked tofu and cook for another minute.

Serve over brown rice. I like to add extra soy sauce and spicy chinese mustard.
