Shake Em Up Crispy Home Fries

What you need: 

baked potatoes (as few or as many as you'd like)
olive oil
1/2 cup chopped yellow onion (or more to taste)
garlic powder
black pepper
paprika
salt

What you do: 

Saute the onion in olive oil. Cut the baked potatoes into 1 inch cubes (please note the potatoes must be cooked!). In a plastic container such as a tupperware (must have a tight fitting lid) pour in a few tablespoons of olive oil and add the cubed potatoes. Shake the mixture until the potatoes are covered in oil. Then add your seasonings (you can get creative here with your seasonings, I added basil oil once which was excellent) and give the mixture a shake again until the seasonings have covered the potatoes. Next, add the potatoes to the onions which by now should be translucent and slighty browned. Mix well and let sit for 10-15 minutes over low-medium heat (it is important not to stir them during this time), then flip them over and let them sit another 10 minutes or until both sides are nice and crispy brown. ENJOY!

SO HOW'D IT GO?

I made these as part of my brunch today at the VNHQ, and they turned out great. I especially love the easy-peasy shake-em-up method. Way less messy than my normal oil+seasoning+hands routine. And speaking of oil, these are great without it, which was a relief to the health-conscious folks in the office.

This was delish! I made it for easter brunch with some Veganomicon waffles, fresh fruit, and mimosas. I was super simple and convenient to make because i prepared it all before company arrived and just let it simmer on the stove until it was time to eat! My meat eating family dug it all! I did not cook the potatoes beforehand and mixed them with seasoning salt, pepper, garlic, paprika, oregano, and a little cayenne (no oil needed). Then added them to the sauteed onions. Family even asked me for the recipe!  ;)

These were great! I followed the author's modification and did not bake the potato first and it was fine! I made this with The Best Breakfast Scramble ever, and a whole wheat English Muffin. I was in breakfast heaven! I actually took a picture for once, and will post it as soon as I upload it.

These were delicious.  I didn't have any cooking oil and found that out a little too late, but if you just dry fry the potatoes and leave out the onions (who needs the onion breath, anyway?), it's still really good.
