Sham's Seriously Simple and Amazing Alfredo

What you need: 

1 pound pasta, to serve (I like bowties)
1/2 cup vegan butter
5 to 7 larges cloves garlic, minced
1 small onion, minced
1 to 2 tablespoons cornstarch
1 (8 ounce) tub vegan cream cheese
1 cup plain nondairy milk (I use soy), plus extra as needed
basil, to taste
oregano, to taste
salt and pepper, to taste
1/4 cup nutritional yeast, optional
vegan breaded chicken patties, baked and cut into chunks, to serve, optional
steamed broccoli or cauliflower, to serve, optional

What you do: 

1. Cook pasta according to package directions. Melt butter in saucepan, add onions and garlic and cook until translucent. Add cornstarch and stir until thick.
2. Add cream cheese and stir until melted. Add milk, stir until blended, and add spices. Boil then set to simmer. Add more milk if sauce is too thick.
3. If using, add nutritional yeast, then "chicken" and broccoli/cauliflower to sauce. Pour sauce over your favorite pasta.
This recipe is dangerously delicious. Prone to defying space and time by disappearing within nanoseconds of its completion. It's even better the next day, if it lives to see it.

SO HOW'D IT GO?

It didn't taste like Alfredo sauce, but the creamy sauce wasn't too bad. It was also a bit oily. I would give it 3 stars, but wouldn't make again.

Delish!!  I pretty much followed the directions...except after I added the milk and spices..I trasferred to a blender and blended til nice and creamy...added 2 tablespoons of the nutritional yeast.  Then poured back in pan and heated.  Yummy!!!

This is awesome! Most vegan alfredo recipes I've seen involve using a blender/food processor and tonight it was a little too late for that so I gave this a try and was not disappointed. My whole family practically licked their plates clean! I cooked Smart Strips Chik'n strips with the butter, onions and garlic and added chopped broccoli towards the end. The fact that it took me all of about 10 minutes to cook was the icing on the cake. Will definitely make this again :)

What are these tears coming out my mouth!? sooo INCREDIBLY delicious.I ran out of nutritional yeast so i used meltable cheddar "cheese" and it is soooooo good. There's no words to describe it. WELL DONE!  :)>>>

This was so much better than dairy alfredo! It's creamy and delicious.  I used a bag of mixed cauliflower and broccoli and omitted the "chicken".  Also I used 6 ounces of fettuccine.  We had a rosemary baguette I had frozen in the freezer with it.  yum.

This recipe is amazing! It's defiantly and acquired taste...I wasn't too fond of it the first few bites and by the end of the bowl I was in love with it! It's even better the next day cold, I plan on trying this again!

This is amazing!  I make it constantly and eat it almost entirely by myself!!!  The sauce is tasty, smooth and delicious, wondereful even on the spoon with nothing else.  I always use nutrional yeast; to me it just tastes best with it.  It is so easy to make too, I just throw all the ingredients together at the end of the day and pretty soon Im in heaven!!!
