Simmered Tofu in Coconut Milk

What you need: 

2 16 oz. tofu (firm)
1/4 cup chopped fresh fennel
1 pack mushrooms sliced
1 teaspoon curry
1/2 cup diced onions
2 garlic cloves
2 oranges(juiced)
2 tablespoon Braggs Liquid Aminos
1/4 cup frozen peas
3 tablespoon nutritional yeast
2 teaspoons olive oil
1 can coconut milk

What you do: 

Cube tofu into bite size pieces, dice onion and fennel. Add oil in pan, then add tofu, fennel and onion. Press garlic with garlic press, add to pan. Cook tofu mix until browned, add mushrooms and peas, cook till warmed up, add remaining ingredients. Simmer for one hour on low heat, will thicken when cooling. Serve over rice or quinoa.
