Simple Thai Pizza
pizza crust (I use the easy, yummy, and Quick Pizza Crust recipe from this site or Rustic
Crust)
2 teaspoons ginger, freshly grated (or 1/2 teaspoon powdered)
2 tablespoons peanut or sesame oil
3 tablespoons peanut butter, unsalted & all-natural
1/4 cup tamari
1 lime, juice only
1/2-1 teaspoon Thai green curry paste (make sure to check label for fish sauce or shrimp
paste)
8 oz. of your choice of protein - Morningstar Farms Chicken Meal Starters, or Thai-Style
marinated baked tofu
1 bunch scallions, chopped (white and light green parts only)
1/2 cup carrot, shredded or julienned
1/2 cup pineapple, chopped
1/4 cup cilantro leaves, loosely packed
Preheat oven to 450*F.
Mix the ginger in with the oil. Brush mixture (I use a silicone basting brush) across the pizza crust.
Bake for 5 minutes in the preheated oven.
Mix together the peanut butter, tamari, lime juice and curry paste. Spread this on the crust and top with remaining ingredients. (TIP: If you are using MSF Meal Starters, put them on the pizza BEFORE the sauce and they will absorb lots of extra flavor.)
Bake for 10 additional minutes.
SO HOW'D IT GO?
I didn't have all of the ingredients on hand this time, but had to have this pizza and it still came out great. I made the regular amount of sauce this time and followed the instructions about brushing the crust with the oil and ginger mixture. I used crumbled tempeh that I mixed with a little tamari and sesame oil and let sit while I made the sauce. No scallions available, but I did use the carrots and cilantro. This time I used a can of pineapple and I do think fresh, as always, tasted better. Overall, this is just a really good recipe that in no way you can screw up. Everyone loves it and it is filling! Delicious! I doubled the "sauce" and used Trader Joe's Chicken-less strips with a whole wheat pie crust from Whole Foods. I mixed up the "sauce" with an immersion blender and used half as per LesLovesVeggies' suggestion as a marinade for the chicken strips. My peanut butter was a jar I had on hand of Peanut Butter & Co.'s "The Heat Is On" peanut butter. The mistake I made was to mix all of the ingredients, including the ginger and sesame oil, together. When eating though -- I would hardly call it a mistake. I used a little sesame oil to brush on the crust and a little in the "sauce." We loved it and I will definitely make this again. ;D
WOOOOW! This was incredible and so unique! The only difference i made was using 4 tablespoons of peanut butter instead of 3, and the sauce was a perfect consistency. I used MF meal starters. I certainly liked it hot more than cold despite what a few reviewers said.

I kept meaning to reply to this once more---straight out of the oven, I really liked this pizza. Reheated for lunch the next day? Not so much. If you're going to make this, plan to finish it that night!
This was okay. I used a pre-made whole wheat pizza crust. I think if I made a homeade crust next time I would like this dish more. I love the flavors of the scallions, pineapple and this sauce together. 3 stars.
Sorry for the double post---I forget to say that I didn't have green curry paste, so I used red, and it came out delicious. :)
This is amazingly good. I made my crust with a bread machine, half whole wheat and half white. For the sauce, I doubled it up except I left out the oil and I mixed in the tamari last, adding it only until it got to the consistency I wanted... So I'm not actually sure how much I ended up using. I did use sesame oil to prep the pan before I spread the dough in, though. As suggested above I used a bunch of the sauce as a marinade for the Morning Star strips.
Also, instead of grating the carrot, I cut it into matchsticks. I baked it for 20 minutes total. I'll absolutely be making this again!
This was fabulous! I added a layer of thinly sliced tomatoes at the bottom, then another layer of sauce and the rest of the toppings. I would have to agree, it is even better cold the next day! ;)
Yummy pizza, definitely 5 stars but I have to agree with other reviewers in that my sauce turned out super-runny. I used red chili paste instead of green, added another tbsp of PB and reduced amount of tamari but it still got all over the place. It was worth it but I think I will try to make the sauce more pastey next time.
...this is also one of the only pizzas i've ever had that's probably BETTER leftover cold than it is fresh! :D
