Simple Yum Yum Spinach Salad

What you need: 

2 or more generous handfuls of raw baby spinach
1/2 cup of blueberries
6 strawberries sliced
1/2 cup chopped walnuts
your choice of brand and amount of vegan poppy seed dressing (I use one from Whole Foods)

What you do: 

I don't even chop up the spinach, I just leave it whole. Add the fruit, dressing and walnuts. Pretty easy. Its also fun to experiment with different fruits and veggies. Sometimes the hubby will add red onion or pineapple. Enjoy.

SO HOW'D IT GO?

I make something like this all the time. I use a balsamic vinegarette though, because I don't have a vegan poppyseed one.  Full of goodness and low in calories. My mom loved it.
