Skillet Apple Crisp - no sugar, no flour

What you need: 

1/3 cup oats - quick cooking
1/4 cup oat bran
1/4 cup spelt bran
2 tablespoons margarine
1 tablespoon maple syrup (optional)
1/2 teaspoon ground cinnamon
1/2 cup unsweetened apple sauce or raw puree
1/4 cup blueberries or cranberries (optional)

What you do: 

In a 6" non stick skillet, over medium low heat, mix the dry ingredients with the melting margarine and maple syrup. Mix well with a wooden spoon.
Spread the oat mixture out evenly across the bottom of the skillet and pour your applesauce over it.
Sprinkle the blueberries, or any berry for that matter, dates, chocolate chips, nuts, whatever you might like, over the applesauce and cover with a lid.
Turn the heat down to low, and let cook for about 7-10 minutes.
To serve: use a flipper to remove from the pan, or take a plate slightly larger than the skillet, place it up side down over the skillet and flip the whole thing out onto the plate.
Serve with your favorite topping - yogurt, whipped topping, etc.

It's very cool that folks find this a good foundation recipe and run with it - I love seeing the variations!

I used regular oats rather than quick-cooking oats, and they worked fine. I mixed the dry ingredients (oats, ground flax, cinnamon, walnuts, and 2 tsp of brown sugar) in a bowl, and used a knife to cut in the margarine. Then I mixed in the maple syrup, and spread the mixture into a greased skillet. Despite the fact that I cooked it on the lowest flame possible, it burned, and completely fell apart when I flipped it over onto a plate. However, it was still delicious. Next time I may try: cooking it for only 5 minutes; mixing the applesauce in with the dry mixture rather than spreading it on top. The bottom line was that this unique breakfast recipe quick, easy, and healthy, and I will make it again!

Tasty, but it ended up tasting like burnt oatmeal with applesauce--which actually wasn't too bad, I think it just didn't come out right. Next time I make it, I think I'll add water to the oatmeal.

You may have had the heat too high while cooking it - I have done the same thing myself :-)

I think "salt to taste" would be nice.
I just kind of messed with this recipe, using odd proportions and only flax and oats for the dry. It tasted freaking incredible and my sister's eyes were fixated on it the whole time I was making it. Only because it was DANGgood.

OMG......Hands Down to U!!!! This is my FAV. I felt a little nutty so I added pecans in it. It came out so De-lish . Will make again.

This was awesome! Quick and easy to make too. I used all oats, and added a bit more cinnamon. I'm going to make it again for breakfast tomorrow if I get up on time!  ;D

Well, I accidentally doubled this (don't ask), so I would imagine that it's even cuter in the small skillet!

Super tasty - super easy to make, I did mine while someone else made pancakes, and several folks put the apple crisp on top of the pancakes.

Alterations: did 1/4 flax and the rest oats, grated a nice, tart granny smith and mixed in a bit of applesauce, stuck really well!

I just made a larger version of this for my whole family.  I didn't really measure anything, just eyeballed it but tried to keep the proportions about the same.  I used oats, oat bran, and replaced the spelt bran with flax meal.  The oat mixture was a little dry so I added a bit of apple juice.  To make it more attractive to the kids, I also added some brown sugar and sprinkled pecans over the top.  It was warm and very filling and delicious!

Will this work with fresh chopped (diced) apples instead of applesauce? Or does the applesauce hold it together somehow?

The applesauce does help a bit with holding it together, but with really finely chopped apple it should work okay...The margarine and maple syrup do a lot of the holding...
