Slow Cooked Rice Pudding

What you need: 

3 cups of light coconut milk
3 cups of soy, rice, or almond milk
1 cup of medium grain rice
1/2 cup of sugar
1 tablespoon of vegan buttery spread
1/4 teaspoon salt
2 teaspoon vanilla extract
1/4 teaspoon nutmeg

What you do: 

Mix all ingredients to a large pot.
Cook over medium heat. When bubbles form, reduce heat to low. Simmer until the rice is tender, stirring occasionally to avoid clumping of the rice. This should take about 25-30 minutes for the cooking process.
When the rice is tender, remove from heat and chill. Sprinkle with cinnamon and serve.

SO HOW'D IT GO?

yummy, this is so creamy and good. i also couldnt wait for it to cool so i ate it warm. i added pure maple syrup and used less sugar. i topped with cinnamon and walnuts.
i forgot to time it too but it took a lot longer then 30 minutes

I just tried this tonight and it turned out wonderfully thick and rich. I served it warm because it was too good to wait to cool down. Raisins on top were a great addition. I also used 1 cup soy milk and 2 cups almond.

I do have to comment on its cooking time... I wasn't timing it, but it seemed to take way longer than 30 minutes. The wait was well worth it though.
