Slow-Cooker Corned "Beef" and Cabbage

What you need: 

1/4 cup olive oil

1/4 cup balsamic vinegar

3 Tablespoons dijon mustard

3 Tablespoons horseradish

2 Tablespoons soy sauce

2 Tablespoons liquid smoke

2 Tablespoons maple syrup (or agave)

1 teaspoon pickling spice

1 Tablespoon mustard seeds

1 teaspoon sage

2 cups vegetable broth

2 cups TVP chunks

one onion, chopped

4 cloves garlic, chopped

4-5 medium golden or large red potatoes, cut into chunks

1 small or 1/2 large green cabbage, cut into chunks

What you do: 

1.  Set the TVP chunks to soak in 4 cups hot water with a little soy sauce added,  Let this soak while you assemble the other ingredients.

2.  Add the first 11 ingredients to the crockpot and set it to high. 

3.  Chop the onion, garlic, potatoes, cabbage and add to crockpot along with the TVP chunks.  Stir to coat and add more vegetable broth if needed.

5.  Cook on high for 5-6 hours.  Add salt and pepper to taste and more maple syrup, soy sauce or vegetable broth if necessary.

6.  Serve with lots of mustard on top and enjoy!
