Smoky Red Beans & Rice
3 cups water
1 cup dry kidney beans
1 cup chopped onion
1 cup chopped green bell pepper
3/4 cup chopped celery
1 package Lightlife "Fakin' Bacon" smoked tempeh strips
1 teaspoon dried thyme
1 teaspoon paprika
3/4 teaspoon (or less, to taste) ground red pepper
1/2 teaspoon black pepper
1 bay leaf
5 garlic cloves, minced
1/2 teaspoon salt
1/4 cup sliced green onions
Combine all ingredients, except for the salt, rice & green onions, in a crock pot. Cover and cook on high for five hours.
Approximately one hour before the end of the cooking time, cook enough rice to make three cups cooked rice. Set aside.
Turn off the crock pot. Discard bay leaf, stir in salt. Serve red beans over rice and sprinkle with green onions.
